Diamond Pattern Fondant Embosser Mould

An embosser that presses a diamond quilt pattern into rolled fondant. It is used on the side panel of a cake before the fondant is lifted into place — trying to emboss after the fondant is on the cake will pull the covering out of true. A quilted panel is one of the few fondant finishes that still looks neat if the covering is not perfect, because the pattern draws the eye away from the seam. Press the whole sheet in one pass rather than section by section.

Care & Use

Roll the fondant to an even thickness first; an uneven sheet gives an uneven emboss. Dust the embosser lightly before pressing. Wash in warm water and dry before storing — fondant left in the pattern hardens and blunts the impression.
