Twenty-four inch bags hold considerably more than the usual sixteen, which matters when you are covering a tiered cake and do not want to stop and refill. The film is thickened so a full bag does not split under two-handed pressure. Twenty-four inches also gives enough spare length to twist the top several turns, which is what actually keeps pressure steady rather than letting icing creep back over your hand. Care & Use
