Seven plastic scrapers for bread and cake work: a stiff bench scraper to divide and lift dough, flexible bowl scrapers that follow the curve of a mixing bowl, and a flat smoother for icing. Cheap, and the tools you reach for most on a bread day. Plastic scrapers are also kind to a bowl’s surface in a way a metal one is not, so the same set works on glass, steel and coated mixing bowls. They are cheap enough to keep two sets, one for dough and one for icing.

Care & Use
Scrape the bulk of the dough off with the scraper itself before washing — it cleans faster than a sponge does. Keep them away from hot surfaces. If an edge chips, replace it, since a chipped bench scraper drags through soft dough instead of cutting.
